Ramequins

(Swiss Cheese Tarts)


What you need:

  • Two packs of Eight frozen Tart Shells each (you can buy those at Publix, sometimes at Walmart and other grocery stores)
  • 2 cups of grated Swiss Cheese (you can also make it a mix of one cup of grated Mozzarella and one cup of grated Swiss Cheese
  • 1 cup of whipping cream (or other heavy cream)
  • 3 eggs
  • 1 teaspoon of mustard
  • Salt and Pepper to taste

How to prepare it:

  • Mix the cheese, whipping cream, eggs, mustard, salt and pepper well.
  • You should have a nice yellow liquid, but not too liquid mass in a metal bowl.
  • Then fill the tart shells about half to three quarters
  • Bake in a preheated oven at 400 degree F for about 15 to 20 minutes or until the tarts are brown.

Variation 1:

  • You can produce the same as one large Cheese tart by using a Pie Crust for a nine inch pie. Alternatively, you can use a Puff pastry sheet in a square or round pie form.

Variation 2:

  • Cut three slices of good quality thin bacon very finely
  • Cut half an smallish onion very finely (optional)
  • Mix both into cheese, whipping cream, eggs mustard mix and see that the bacon distributes well in the mix

A Glass of cold Pino Grigio or Frascati will do well with it!
