Tomatoes,
Parsley, and Olive Oil in Pita Bread Pockets
What you need:
For two
people
- Four
tomatoes on-the-vine (if you only get
Roma tomatoes make it six)
- Half a cup
of finely cut Parsley;
- Optional: A
quarter cup of finely cut fresh Basil, if
you like the taste of Basil
- Light Olive
Oil
- Salt and
Pepper to taste
- four Pita
bread pockets cut in half
How to prepare
it:
- Cut the
tomatoes into small cube slices and put
them into a preparation bowl
- Sprinkle
the finely cut parsley over the Tomatoes
- Sprinkle
the finely cut Basil over the same, if
you use Basil
- Use Salt
and Pepper to taste
- Pour the
Light Olive Oil over the plate
- mix well,
best by hand
- Warm the
Pita bread in the oven
- take out
and cut in half
- cut the
pockets open
- fill the
pockets with the tomato and parsley
mix
Variation: You
can also cut some Mozzarella into small cubes and
add it to the mix
A
Glass of cold Pino Grigio or Frascati
will do well with it!
