Tomatoes with Mozzarella,

Parsley, Basil and Olive Oil

What you need:

  • Four Tomatoes on-the-vine (if you only get Roma tomatoes make it six)
  • One Ball of Mozzarella Cheese
  • Half a cup of finely cut Parsley
  • A quarter Cup of finely cut fresh Basil
  • Light Olive Oil
  • Salt and Pepper to taste
  • One loaf of French bread cut into slices

How to prepare it:

  • Use two large plates
  • Cut the Mozzarella into about quarter inch thick slices and
  • Put them on the plate next to each other (six to eight per plate)
  • Cut the Tomatoes into nice quarter inch thick slices and put them on top of each of the Mozzarella slices
  • Sprinkle the parsley over the Tomatoes and Mozzarella
  • Sprinkle the Basil over the same
  • Use Salt and Pepper to taste
  • Pour the Light Olive Oil over the plate

A Glass of cold Pino Grigio or Frascati will do well with it!
