Bohemian Meat Salad


What you need:

  • a packet of four or five Wieners or Knackwurst (Aldi probably sells the best quality look for the Bavarian labels)
  • four hard boiled eggs
  • a block of Havarty Cheese or, if you want to spend the money, Gruyere or real Swiss Emmental (known in the USA as Swiss Cheese)
  • Light Olive Oil
  • Vinegar
  • Salt and Pepper to taste
  • a heaped tablespoon of Mayonnaise and a normal tablespoon of mustard
  • a tin of good quality peas
  • A red pepper
  • a cup full of finely cut parsley

How to prepare it:

  • Put the Wieners or Knackwurst into hot water and slowly boil (I do it inside they plastic packs, but you can take them out of the plastic)
  • boil the eggs and let both the saucisses and the eggs cool down

While you wait for these to cool down start preparing the salad sauce

  • use a large preparing bowl
  • three table spoons of light olive oil
  • two table spoons of vinegar
  • Use Salt and Pepper to taste
  • One heaped tablespoon oif Mayonnaise (light will be ok)
  • One tablespoon of mustard
  • Use a whisk and mix well, beat until it has a little foam;

Add the ingredients to the salad sauce:

  • cut the red pepper into small cubes (without the seed)
  • cut the cooled sausages into small pieces
  • cut the cooled eggs with an egg cutter
  • cut the cheese into small cubes

and put all of that into the salad sauce;

  • add the tin full of peas
  • Now mix all the ingredients very well in the preparing bowl. If you need to make some more salad sauce just add it. You can also add more Mayonnaise if that is necessary.

Get some French bread with it. It is a light summer lunch time or evening meal.


A Glass of cold Pino Grigio or Frascati will do well with it!
